One of the very first plant-based, whole food recipe cookbooks I bought was one called Unprocessed. It’s written by a fire-cracker-of-a-woman named Chef AJ. When I began searching online for quick and easy whole food recipes, I quickly bumped into her YouTube channel. I think I must of binge watched all of her Chef and the Dietitian episodes over the course of a few days (and there are quite a few of them). Her recipes looked delicious AND easy, perfect! …
I quickly found out that she had created this cookbook which offered many additional recipes not available online. To say the least, I was curious. One thing I found interesting was that Chef AJ’s recipes are salt, oil, sugar, and gluten free. I’d never cooked that way before, but was open to it since the food in her videos looked so yummy. (She uses date syrup to replace sugar in her recipes and it’s fantastic – I wrote about that in this post.) So I bought the book on Amazon – as seen here – and it quickly became one of my favorites. The full title of her book is Unprocessed: How to achieve vibrant health and your ideal weight. It includes over 100 easy, delicious, nutrient-rich and gluten-free recipes. The first 50 or so pages outlines the story of Chef AJ’s plant-based journey, which is interesting – that’s followed by the recipes. This book doesn’t have a single picture in it – what…? I know, food pictures are one of my favorite things too, but this book is a no nonsense masterpiece that is fantastic despite the fact that there are no pictures to drool over. Most of the recipes require 10 or less ingredients, which I love. I’m one of those people that passes right over recipes with really long ingredient lists – too expensive and time consuming. Her recipes are quick, easy, and oh so healthy. She covers desserts, appetizers, beverages, entrees, salads & dressings, soups, sides, and if that’s not enough – truffles, yes truffles!
I highly, highly, highly recommend that you treat yourself to this cookbook if you’d like to ‘easily’ incorporate more whole food plant-based goodness into your life.
